A hot water tank that heats up to like 250 C, only heats during the peak of solar power, and mixes hot and cold water as needed to keep a consistent output water temperature.
With some cost of insulation, power, and tank build to contain the pressure, this should balance out to overheating water during the noonday sun so we have hot water available all day.
